This Easy Chicken Fajitas Recipe is simple to make, adaptable to your heat tolerance, and a family-friendly dinner!
When the whole family was home for dinner over the holidays, I asked what they wanted for dinner. Instead of the typical reply of “steak” which is common when mom and dad are buying, my oldest son asked for fajitas. Chicken Fajitas specifically. The deal was done!

Ingredient Notes
- Kitchen Staples – Salt (I used Kosher, but Table Salt if fine), Freshly Ground Black Pepper, Olive Oil
- Boneless, Skinless Chicken Breast Halves – Slice into strips.
- Onion – White or Yellow, with the outer peel removed; slice into strips.
- Bell Peppers – Ribs and seeds removed; sliced. A variety of colors is visually appealing, but not necessary.
- Chili Powder (not chili seasoning which is a mix of spices)
- Onion Powder
- Cumin

- Boneless, Skinless Chicken Breasts – Cut into strips.
- Onion – White or Yellow, Remove the outer peel, and cut into slivers.
- Bell Peppers – I like using a variety of colors, red, orange, and yellow. Remove the core and seeds and cut the peppers into slices.
- Olive Oil – I used extra virgin olive oil; California Olive Ranch is my go-to brand.
- Tortillas – To serve. Use your preferred variety; I used flour tortillas.
- Tomato Salsa, Guacamole, Sour Cream – Optional toppings, to serve.
How to Make
- Slice onions, peppers, and chicken into strips making them easier to eat.
- In a bowl, toss the chicken with the seasonings and a tablespoon of the olive oil.
- Add another tablespoon of the olive oil to a skillet, heat, and cook half the chicken just until done. Remove and cook the rest of the chicken. Set aside.
- Add more olive oil to the pan and saute the peppers and onions until soft, then add the chicken back to the pan and cook until heated through.
- Remove to a serving plate, and pass with the tortillas of your choice and all the toppings. Prepare to watch everything disappear!
Recipe Tips
- If you want spicier chicken fajitas, add some red pepper flakes to the chicken. A little dried oregano would also be tasty!
- PRO-Tip: If weather permits, grill your chicken before slicing. Adding some smoky undertones would be delicious!
- Use your favorite tortillas. I like using whole wheat, but the kids and my husband like regular flour tortillas.
- I did not add lime juice to these fajitas, but squeezing half of a fresh lime over the chicken before seasoning adds another delicious layer of flavor.
- Serve with guacamole, salsa, sour cream, or any of your favorite toppings.
- PRO-Tip: This recipe can also be tweaked for beef enchiladas. Use strips of flank steak. Score (slice shallow cuts against the grain of the meat to allow seasonings to penetrate), season both sides well, add a squeeze of lime juice, and let marinate for a few hours to let the flavors infuse. Grill to medium rare, let rest, then slice and serve beef strips with tortillas and toppings of your choice.

Chicken Fajitas Recipe
An easy skillet recipe, these chicken fajitas will be on the table in less than 30 minutes!
Ingredients
- 3-4 Boneless Skinless Chicken Breasts, cut into strips
- 1 White or Yellow Onion, cut into wedges, then sliced into strips
- 3 Bell Peppers, I used a red, orange and yellow, seeds and ribs removed, sliced into strips
- Extra Virgin Olive Oil
- 1 teaspoon Chili Powder
- ½ teaspoon Onion Powder
- ½ teaspoon Cumin
- ½ teaspoon freshly ground Black Pepper
- Kosher Salt, to taste
- Tortillas (warmed), Salsa, Guacamole, Sour Cream, to serve, optional
- Lime, optional, to squeeze over cooked chicken if desired
Instructions
- In a medium bowl, whisk together all the dry seasonings plus a teaspoon of salt.
- Add the sliced chicken and toss to combine.
- Saute the seasoned chicken in batches in a small amount of olive oil until cooked. Add more olive oil as needed to prevent sticking. Set aside.
- Add more olive oil to the pan and cook the onions and peppers until tender. Add chicken back to the pan and stir until all ingredients are hot.
- Squeeze a little lime juice over chicken, if desired.
- Serve chicken mixture with tortillas, salsa, guacamole, sour cream or any favorite toppings.
Notes
Beef fajitas can be made using this recipe. Use a flank steak, season, grill, and cut into strips.
Warm your tortillas before serving. They can be warmed in the oven, covered with foil to prevent them from drying out.

Chicken fajitas are a favourite of ours too. It’s just such a fresh quick dinner. I remember the first time we had. It was down in Mexico the aroma that hit your nose as they were bringing that sizzling hot cast iron frying pan to the table was incredible. Even today I’ve got it in rotation for my menu plans. It’s just lasted that long.
