Ingredient Notes

  • Kitchen Staples – Kosher Salt, Ground Black Pepper, Red Wine Vinegar
  • Avocado Oil – Extra Virgin Olive Oil can be substituted.
  • Sliced Provolone Cheese – Cut into 1-inch cubes.
  • Sliced Ham – Cut into 1-inch cubes.
  • Sliced Genoa Salami – Cut into 1-inch cubes.
  • Sliced Pepperoni – Cut into 1-inch cubes.
  • Grape Tomatoes – Slice lengthwise. You may also use sliced or halved cherry tomatoes.
  • Sweet Onion – Use half, peel, then cut into thin slices (I used a yellow onion).
  • Shredded Iceberg Lettuce – Look for an 8-ounce bag in the produce aisle or shred your own from a head of iceberg lettuce.

Recipe Tips

  • For some extra pizzazz, top this chopped Italian salad with some chopped mild or hot cherry peppers.
  • If you’re not on a low-carb diet, make some croutons by sauteing bread cubes (from a baguette or another loaf of bread) in a mixture of salted butter and olive oil. Sprinkle a few homemade croutons over each serving for a delicious crunch.
  • If you’d like less intense onion flavor, soak your chopped onions in ice water to remove some of the bite. Drain on a cloth or paper towel before using.
  • To avoid soggy lettuce, don’t add the dressing until you’re ready to serve the salad.

Chopped Italian Sub Bowl

All the flavors of an Italian sub sandwich without all the carbs!

Ingredients

  • 3 tablespoons avocado oil
  • 1 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • ¼-½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 (one ounce) slices provolone cheese
  • 4 ounces sliced ham
  • 2 ounces sliced pepperoni
  • 8 ounces grape tomatoes, sliced lengthwise
  • ½ sweet onion, peeled and thinly sliced
  • 1 (8-ounce) bag shredded iceberg lettuce

Instructions

  1. In a large mixing bowl, combine the oil, vinegar, oregano, salt, and pepper; set aside.
  2. On a cutting board, stack cheese, ham, salami, and pepperoni. Use a chef's knife to cut the stack into 1" cubes.
  3. Don't bother separating it and toss it into the mixing bowl with the dressing.
  4. Add tomatoes, onion, and lettuce. Toss until all the ingredients are well coated and serve immediately.
