Strawberry Bellinis
Memories of Peach Bellinis in Venice were the impetus to whip up these luscious, three-ingredient fresh Strawberry Bellinis. There’s no excuse not to make a batch!
This Bellini Recipe combines Strawberry puree and Champagne to make the most elegant, tasty, and irresistible cocktail you’ll ever sip!

Venice. The tide was out and Piazza San Marco was abuzz with tourists. Some friends from Indy were also in the city of love for the day, so we gathered with them at a cafe on the square, where a self-dubbed “professional waiter” catered to our every need. Karen and I sipped on our peach bellinis near where they were first served, at the famous Harry’s Bar.
Made of white peach puree and Prosecco, a sparkling Italian wine, the classic Bellini is elegant and oh, so tasty. And I wanted to create a strawberry version while I had some ripe, fragrant berries in my fridge. That’s how this Bellini Cocktail came about.
How to Make a Strawberry Puree
Making a fruit puree is a breeze. Check the sweetness of your fruit and adjust the sweetener as needed. Here’s how to make an easy strawberry puree:
- Toss 2 cups of berries and 2 tablespoons of sugar or simple syrup into your blender.
- Puree, then strain to remove any small strawberry seeds.
How to Make a Bellini
- To make these refreshing strawberry bellinis, divide the flavor-packed puree between two martini glasses.
- Top with champagne by tipping the glass and slowly pouring slowly while uprighting the glass as it fills. This is to minimize fizz and foam from developing. Think about how you pour beer into a beer glass.
- Garnish with a perfect, ripe, and luscious strawberry.

Frequently Asked Questions
There are two main differences. First, a Bellini is made with a fruit puree whereas a mimosa is made with fruit juice.
Second, a Bellini is made with Italian Prosecco and a Mimosa is made with French (or American) Champagne.
The owner and bartender of Venice’s famous Harry’s Bar, Giuseppe Cipriani, first made these in 1948 to showcase Italy’s sparkling wine, Prosecco, and their luscious peach crop.
Contrary to rumors, this Bellini drink was not named for the Sicilian opera composer, Vincenzo Bellini, but instead the the15th-century Venetian artist, Giovani Bellini. The colors of the cocktail reminded Harry’s Bar owner, Cipriani, of his paintings.
To make simple syrup at home, mix equal parts water and sugar and simmer until the sugar is dissolved. Cool before using. Store leftovers in the refrigerator for up to a month.
You can also find Rose’s Simple Syrup in liquor stores or where liquor is shelved in larger grocery stores.

Strawberry Bellini
A berry twist on the classic Peach Bellini that was introduced in Venice, Italy. Recipe adapted from Food Network
Ingredients
- 1 pint ripe strawberries, stems removed (plus a couple to garnish)
- 2 tablespoons plain simple syrup (or strawberry simple syrup)
- 1 cup Champagne or Prosecco
Instructions
- Puree strawberries and simple syrup in blender.
- Strain mixture and divide between two glasses.
- Top with champagne and garnish each with a strawberry to serve.

I’d like to be sipping cocktails at Harry’s Bar in Venice. That does sound very romantic. And I’ll have one of each – a peach and then a strawberry! I’m so glad you dog survived the surgery. I hope the wound heals quickly and that your dog leaves the stitches alone. When my Rosie was de-sexed she pulled out first the external stitches and then the internal stitches. It was horrific. I had to rush her back to the vet for another round of surgery and they kept her in for longer on sedation to allow the wound to heal. Honestly! xx
